I totally feel duped. While cleaning out my kitchen cabinets, I found a full bag of Indian Head Yellow Corn Meal. Since I clearly don’t use it very often, I figured I’d make the easy peasy corn bread recipe listed on the back of the bag. When I combined the ingredients and popped my bread in the oven, I noticed a variation on the packaging that I hadn’t caught earlier: for a sweeter, moister corn bread. Um, seriously? Why even bother putting the first recipe on there? Why on earth would I want dry, unsweetened corn bread? Why would ANYONE want dry, unsweetened corn bread? Sorry. End rant. The bread came out fine. It came out better than fine. Okay, it’s kind-of delicious. I just wish it was moister (doesn’t seem like a real word) and sweeter. All recipes pictured below … along with a honey variation that I may try next time. Maybe I’ll throw in some jalapeños and call it a date. Enjoy!
